Foodservice design is an important aspect of running any foodservice operation. So, where does one of the most prestigious resorts in the world, the Balboa Bay Club and Resort in Southern California, go when they need to create a new highly professional kitchen design to accommodate their demanding and discerning hospitality requirements?

Trimark Raygal was chosen to re-design the resort's central kitchen that serves the main reception areas, including the 7,000-square-foot grand ballroom, which accommodates up to 750 for receptions and 550 for banquets. In addition to serving the large banquet room, the redesign allows the facility and staff to be able to simultaneously serve all the smaller private functions the club has always been famous for.

The newly-completed project includes five coolers in the main kitchen, each maintaining compartments set at different temperatures to keep produce, fish, meat and dairy foods at their optimum temperatures and a large, sophisticated reverse osmosis water system, designed and installed to ensure the purest water for both cooking and drinking.

And of course, what would a facility of this caliber be without its own bakery.
